Ice cream ( Brazilian Portuguese ) or ice cream ( European Portuguese ) is a frozen dairy dessert, such as milk or cream, to which fruit or other ingredients and flavors are added. Most contain sugar, although some are made with sweeteners. In some cases, colorings or flavorings are added as a complement or substitute for natural ingredients. The meaning of the term “ice cream” or “ice cream” varies by country. Local law regulates both trade names and the relative amount of ingredients for each. In both countries, the same terms are used to denote an immense variety of ice products, even if they are made from water rather than milk. In Portugal, ice cream refers to a specific type of food ice cream made from fruit puree and sugar syrup, to which no milk fat is added. In Brazil, the same type of product is called sorbet. The term is also used in several countries to distinguish frozen fruit products without milk or eggs, such as French sorbet or Italian sorbetto.
During the final production phase, the ingredient mixture is kept cool to prevent ice crystals from forming. The earliest references to the origins of ice cream include a story about its invention among the Persians, Roman emperor Nero (37-68), who reportedly brought snow and ice from the mountains and mixed it with fruit, and another from Chinese emperor King Tang (618-697), who would have a method of combining milk with river water. The invention of ice cream, however, is due to the Persians.
According to the Washington Magalhães card collection, popsicle production in Brazil was said to have started in Cataguases, Minas Gerais, in the late 19th century. But other stories say that ice cream began to be made in 1934 in the city of Rio de Janeiro when a ship with a natural peach shipment arrived from Boston.
